Anantara Plaza Nice Hotel

Anantara Plaza Nice bets everything on location and delivers on it — Place Masséna at the door, the sea a short walk away, and a rooftop that turns breakfast, lunch, dinner and Sunday brunch into the actual highlight of the stay. What it doesn't offer is a pool, a private beach, or an interior you'll remember a year from now. Come for the address. Stay for the rooftop.

Hôtel du Couvent doesn't want you to see Nice in three days — it wants you to live in it for a week. A restored seventeenth-century convent above the Old Town, built around terraced gardens, Roman-style thermal baths, a twenty-metre pool and a kitchen that grows its own ingredients. This is a hotel for people who'd rather unpack once and stay put.

Le Negresco doesn't try to be the best hotel in Nice — it tries to be the most Nice hotel there is, and wins by refusing to compete on anyone else's terms. Ceremonial doormen, a private art collection worthy of a museum wing, and bedrooms that look like they were decorated by twelve different aristocratic aunts. You either fall for it in the first five minutes, or you never will.
